To show their appreciation for local law enforcement, Shenandoah residents Chris and Natalie West delivered an assortment of homemade cookies, cakes and candies to the Shenandoah Police Department this week. “It takes me about a week to make a dozen different varieties of these goodies. It’s a labor of love,” she said.

 

Chris said he got to know some of the officers through attending SHPD’s citizen’s academy during the last two years. “I learned something new every time,” he said. 

 

Natalie shared her recipe for Date Nut Macaroons, one of her favorites:

 

2 cups shredded coconut

1/2 cup pecan

1 cup chopped dates

2/3 cup sweetened condensed milk

 

Mix the dry ingredients together, then add the milk.

Drop rounded tablespoons on a greased cookie sheet and bake at 350 for 10 minutes.
